Truffled Celeriac Soup

Ingredients - Serves 4
- Salt and pepper - To taste
- Truffle oil - 1 tablespoon
- Heavy cream - 1/2 cup
- Chicken or vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Celeriac - 1 large, peeled and chopped
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the celeriac and cook for another 5 minutes, until it begins to soften.
- Add the broth and bring to a boil. Reduce heat and simmer until the celeriac is tender, about 30 minutes.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree in batches.
- Stir in the heavy cream and truffle oil. Season with salt and pepper.
