Trofie al Pesto
Trofie al Pesto is a traditional Italian dish from Liguria, made with homemade pesto, potatoes, green beans, and trofie pasta.
Ingredients - Serves 4
- Green beans - 1 cup, trimmed and halved
- Potatoes - 2 small, diced
- Trofie pasta - 500 grams
- Salt - To taste
- Extra virgin olive oil - 1/2 cup
- Parmesan cheese - 1/2 cup, grated
- Pine nuts - 1/3 cup
- Garlic - 2 cloves
- Basil leaves - 2 cups
Let's Get Started
- In a food processor, combine the basil, garlic, pine nuts, Parmesan cheese, olive oil, and salt. Process until smooth to make the pesto.
- Bring a large pot of salted water to a boil. Add the pasta, potatoes, and green beans. Cook until the pasta is al dente, about 8-10 minutes.
- Drain the pasta and vegetables, reserving some of the pasta water.
- In a large bowl, combine the pasta, vegetables, and pesto. Toss well to combine, adding a little pasta water if needed to loosen the sauce.
- Serve the Trofie al Pesto immediately, garnished with extra Parmesan cheese if desired.
