  1. In a food processor, combine the basil, garlic, pine nuts, Parmesan cheese, olive oil, and salt. Process until smooth to make the pesto.
  2. Bring a large pot of salted water to a boil. Add the pasta, potatoes, and green beans. Cook until the pasta is al dente, about 8-10 minutes.
  3. Drain the pasta and vegetables, reserving some of the pasta water.
  4. In a large bowl, combine the pasta, vegetables, and pesto. Toss well to combine, adding a little pasta water if needed to loosen the sauce.
  5. Serve the Trofie al Pesto immediately, garnished with extra Parmesan cheese if desired.
