Green Beans with Pine Nuts and Parmesan
This is a simple and delicious side dish featuring green beans tossed with toasted pine nuts and freshly grated Parmesan cheese.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, freshly grated
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Pine nuts - 1/4 cup
- Green beans - 1 pound, trimmed
Let's Get Started
- Bring a large pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and set aside.
- In a large skillet, toast the pine nuts over medium heat until golden, about 3 minutes. Remove from the skillet and set aside.
- In the same skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the cooked green beans to the skillet and toss to coat in the garlic oil. Season with salt and pepper.
- Remove from heat and sprinkle with the toasted pine nuts and grated Parmesan cheese. Toss until the cheese is melted and the beans are well coated.
