  2. In a mixing bowl, combine the crushed chocolate sandwich cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate mixing bowl, beat the cream cheese, granulated sugar, and cocoa powder until smooth and creamy.
  4. Add the melted semi-sweet chocolate, eggs, and vanilla extract to the cream cheese mixture. Mix until well combined.
  5. Pour the chocolate cheesecake filling over the crust in the springform pan.
  6. Bake for 50-60 minutes, or until the center is set and the edges are slightly puffed.
  7. Remove the cheesecake from the oven and let it cool to room temperature.
  8. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let it sit for a minute, then stir until smooth and glossy to make the ganache.
