Let's Get Started

  1. Season the steaks with salt and pepper.
  2. Heat the butter in a skillet over medium-high heat. Add the steaks and cook to desired doneness, about 4 minutes per side for medium-rare. Remove the steaks from the skillet and keep warm.
  3. In the same skillet, cook the foie gras until golden brown, about 2 minutes per side. Remove from the skillet and keep warm.
  4. Deglaze the skillet with the Madeira wine, scraping up any browned bits from the bottom of the skillet. Add the beef stock and bring to a simmer. Cook until the sauce has reduced by half, about 10 minutes.
  5. Place the toasted bread on each plate. Top with a steak, a slice of foie gras, and some truffle slices. Spoon the sauce over the top. Serve immediately.
