Tournedos Rossini
Tournedos Rossini is a French steak dish, topped with a rich Madeira and truffle sauce and a slice of foie gras. It's a decadent dish perfect for special occasions.
Ingredients - Serves 2
- Bread - 2 slices, toasted
- Black truffle - 1, thinly sliced
- Beef stock - 1/2 cup
- Madeira wine - 1/2 cup
- Foie gras - 2 slices
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Beef tenderloin steaks - 2 (6 ounce)
Let's Get Started
- Season the steaks with salt and pepper.
- Heat the butter in a skillet over medium-high heat. Add the steaks and cook to desired doneness, about 4 minutes per side for medium-rare. Remove the steaks from the skillet and keep warm.
- In the same skillet, cook the foie gras until golden brown, about 2 minutes per side. Remove from the skillet and keep warm.
- Deglaze the skillet with the Madeira wine, scraping up any browned bits from the bottom of the skillet. Add the beef stock and bring to a simmer. Cook until the sauce has reduced by half, about 10 minutes.
- Place the toasted bread on each plate. Top with a steak, a slice of foie gras, and some truffle slices. Spoon the sauce over the top. Serve immediately.
