  1. Heat olive oil in a large non-stick skillet over medium heat.
  2. Add the sliced potatoes and onions to the skillet. Cook, stirring occasionally, until the potatoes are tender and lightly golden, about 10-15 minutes.
  3. In a large bowl, beat the eggs with salt and pepper.
  4. Transfer the cooked potatoes and onions to the bowl with the beaten eggs. Mix well to combine.
  5. Heat the same skillet over medium heat and add a little more olive oil if needed.
  6. Pour the egg, potato, and onion mixture into the skillet. Cook for about 5-7 minutes, or until the bottom is set.
  7. Using a large plate or a lid, carefully flip the tortilla to cook the other side. Cook for another 5-7 minutes, or until the tortilla is cooked through and golden brown.
  8. Remove the tortilla from the skillet and let it cool slightly before slicing into wedges.
  9. Serve warm or at room temperature. Enjoy!
