  1. Heat olive oil in a large non-stick skillet over medium heat.
  2. Add the sliced potatoes and onions to the skillet and cook until the potatoes are tender and lightly browned, about 10-15 minutes. Stir occasionally to prevent sticking.
  3. In a large bowl, beat the eggs with salt and pepper.
  4. Transfer the cooked potatoes and onions to the bowl with the beaten eggs. Mix well to combine.
  5. Heat a little more olive oil in the skillet over medium heat.
  6. Pour the egg, potato, and onion mixture into the skillet and spread it evenly.
  7. Cook for about 5-7 minutes, or until the bottom is set and golden brown.
  8. Using a large plate or a lid, carefully flip the tortilla to cook the other side. Cook for another 5-7 minutes.
  9. Slide the cooked tortilla onto a serving plate and let it cool slightly before slicing.
  10. Serve warm or at room temperature. Enjoy!
