Tomato Soup
A comforting and flavorful tomato soup made with fresh tomatoes and herbs.
Ingredients - Serves 4
- Heavy cream - 1/4 cup
- Salt and pepper - To taste
- Dried oregano - 1/2 teaspoon
- Dried basil - 1 teaspoon
- Sugar - 1 teaspoon
- Tomato paste - 2 tablespoons
- Vegetable broth - 4 cups
- Tomatoes - 6 large, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped tomatoes, vegetable broth, tomato paste, sugar, dried basil, dried oregano, salt, and pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the heavy cream. Heat for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot and enjoy!
