Tomato Rice
A flavorful and tangy rice dish made with tomatoes, rice and spices. It's a popular South Indian recipe.
Ingredients - Serves 4
- Curry leaves - few
- Mustard seeds - 1/2 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Garam masala - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger-garlic paste - 1 teaspoon
- Green chillies - 2, slit
- Onion - 1, finely chopped
- Tomatoes - 2, finely chopped
- Basmati rice - 1 cup
Let's Get Started
- Wash and soak the basmati rice for 30 minutes. Then cook the rice and set it aside.
- Heat oil in a pan, add mustard seeds. When they start to splutter, add curry leaves and green chillies.
- Add chopped onions and sauté until they turn translucent.
- Add ginger-garlic paste and sauté until the raw smell goes away.
- Add chopped tomatoes, turmeric powder, red chilli powder, garam masala and salt. Cook until tomatoes are mushy.
- Add the cooked rice to the tomato mixture and mix gently.
- Cover and cook for 5 minutes on low flame.
- Tomato rice is ready to serve. Enjoy it hot with raita or any side dish of your choice.
