Tomato Basil Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the canned tomatoes, chicken broth, and basil. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream and let the soup simmer for another 5 minutes.
  7. Serve the soup hot with a sprinkle of fresh basil on top.
