Tomato Basil Soup
A classic, hearty soup with the fresh flavors of tomatoes and basil.
Ingredients - Serves 4
- Heavy cream - 1/2 cup
- Salt and pepper - To taste
- Fresh basil - 1 cup, chopped
- Chicken broth - 4 cups
- Canned tomatoes - 2 cans (14.5 oz each)
- Garlic - 3 cloves, minced
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the canned tomatoes, chicken broth, and basil. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and let the soup simmer for another 5 minutes.
- Serve the soup hot with a sprinkle of fresh basil on top.
