Tom Kha Gai Noodle Soup

Ingredients - Serves 4
- Thai chili peppers - 2, sliced (optional)
- Cilantro - 1/4 cup, chopped
- Rice noodles - 8 ounces, cooked
- Sugar - 1 teaspoon
- Lime juice - 2 tablespoons
- Fish sauce - 2 tablespoons
- Mushrooms - 1 cup, sliced
- Kaffir lime leaves - 4 leaves
- Galangal - 2 slices
- Lemongrass - 2 stalks, bruised
- Chicken broth - 4 cups
- Coconut milk - 2 cups
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the lemongrass, galangal, and kaffir lime leaves to the pot. Simmer for 10 minutes to infuse the flavors.
- Add the sliced chicken breast and mushrooms to the pot. Cook until the chicken is cooked through, about 5 minutes.
- Stir in the coconut milk, fish sauce, lime juice, and sugar. Simmer for another 5 minutes.
- Divide the cooked rice noodles among serving bowls.
- Ladle the hot soup over the noodles.
- Garnish with chopped cilantro and sliced Thai chili peppers, if desired.
