Tom Kha Gai
This is a traditional Thai soup known for its rich and creamy coconut base, infused with the flavors of galangal, lemongrass, and kaffir lime leaves.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Lime juice - 3 tablespoons
- Mushrooms - 1 cup, sliced
- Thai chili peppers - 2, crushed
- Sugar - 1 tablespoon
- Fish sauce - 3 tablespoons
- Kaffir lime leaves - 6
- Lemongrass - 2 stalks, crushed
- Galangal - 1 piece, sliced
- Chicken breast - 2, sliced
- Coconut milk - 2 cans
Let's Get Started
- In a pot, combine coconut milk, galangal, lemongrass, and kaffir lime leaves. Bring to a boil.
- Add the chicken and mushrooms to the pot. Cook until the chicken is done.
- Season the soup with fish sauce, sugar, and Thai chili peppers.
- Remove from heat and add lime juice.
- Garnish with cilantro before serving.
