Tokchon Style Naengmyeon
Tokchon-style naengmyeon is a refreshing Korean cold noodle dish topped with a spicy sauce, pickled radish, cucumber, and a boiled egg.
Ingredients - Serves 2
- Spicy sauce - To taste
- Ice cubes - 1 cup
- Green onions - 2, chopped
- Asian pear - 1, thinly sliced
- Boiled egg - 2, halved
- Pickled radish - 1/2 cup, thinly sliced
- Cucumber - 1, julienned
- Beef broth - 4 cups
- Buckwheat noodles - 200g
Let's Get Started
- Cook the buckwheat noodles according to the package instructions. Drain and rinse with cold water.
- In a large pot, bring the beef broth to a boil. Remove from heat and let it cool.
- In a serving bowl, place a handful of ice cubes.
- Add the cooked noodles on top of the ice cubes.
- Pour the cooled beef broth over the noodles.
- Top with julienned cucumber, pickled radish, boiled egg halves, thinly sliced Asian pear, and chopped green onions.
- Drizzle the spicy sauce over the toppings, according to your taste.
- Serve immediately and enjoy!
