Tofu Scramble with Spinach
A healthy and delicious vegan breakfast option, this tofu scramble with spinach is packed with protein and nutrients.
Ingredients - Serves 4
- Salt and pepper - To taste
- Spinach - 2 cups, chopped
- Nutritional yeast - 2 tablespoons
- Turmeric - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Firm tofu - 1 block, drained and crumbled
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the crumbled tofu, turmeric, and nutritional yeast to the skillet. Stir well to combine and cook for another 5 minutes.
- Add the chopped spinach to the skillet and continue to cook until the spinach is wilted, about 2 minutes.
- Season with salt and pepper to taste.
- Serve the tofu scramble hot, with toast or a side of fruit for a complete breakfast.
