Tofu Kaiseki
Tofu Kaiseki is a traditional Japanese multi-course meal that highlights tofu as the main ingredient. This recipe includes a variety of dishes such as tofu sashimi, tofu soup, and grilled tofu.
Ingredients - Serves 4
- Vegetable oil - For grilling
- Miso paste - 2 tablespoons
- Seaweed - 1/4 cup, dried
- Ginger - 1 tablespoon, grated
- Green onions - 4, chopped
- Sugar - 2 tablespoons
- Sake - 1/4 cup
- Mirin - 1/4 cup
- Soy sauce - 1/2 cup
- Silken tofu - 2 blocks
Let's Get Started
- Prepare the tofu sashimi by slicing the tofu into thin slices. Arrange on a plate and chill in the refrigerator.
- Make the dipping sauce by combining soy sauce, mirin, sake, sugar, green onions, and grated ginger in a saucepan. Bring to a boil, then reduce heat and simmer until slightly thickened. Let cool.
- Prepare the tofu soup by boiling water in a pot. Add dried seaweed and simmer until rehydrated. Add tofu cubes and miso paste, stirring until miso is dissolved. Keep warm on low heat.
- Grill the remaining tofu by brushing with vegetable oil and grilling on each side until golden brown. Serve with dipping sauce on the side.
- Serve the tofu kaiseki with the tofu sashimi first, followed by the tofu soup, and finally the grilled tofu. Enjoy this traditional Japanese meal.
