Let's Get Started

  1. Prepare the tofu sashimi by slicing the tofu into thin slices. Arrange on a plate and chill in the refrigerator.
  2. Make the dipping sauce by combining soy sauce, mirin, sake, sugar, green onions, and grated ginger in a saucepan. Bring to a boil, then reduce heat and simmer until slightly thickened. Let cool.
  3. Prepare the tofu soup by boiling water in a pot. Add dried seaweed and simmer until rehydrated. Add tofu cubes and miso paste, stirring until miso is dissolved. Keep warm on low heat.
  4. Grill the remaining tofu by brushing with vegetable oil and grilling on each side until golden brown. Serve with dipping sauce on the side.
  5. Serve the tofu kaiseki with the tofu sashimi first, followed by the tofu soup, and finally the grilled tofu. Enjoy this traditional Japanese meal.
