Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar has dissolved. Continue boiling until the syrup reaches a golden caramel color.
  3. Pour the caramel into a round cake pan, tilting to coat the bottom and sides. Set aside.
  4. In a large bowl, beat the egg yolks with the sugar syrup until well mixed.
  5. Pour the egg yolk mixture into the caramel-coated pan.
  6. Place the pan in a larger baking dish and add enough hot water to the larger dish to come halfway up the sides of the cake pan.
  7. Bake in the preheated oven for about 1 hour, or until the custard is set and a knife inserted into the center comes out clean.
  8. Remove from the oven and let cool. When completely cool, invert onto a serving plate.
