Tocino de Cielo
Tocino de Cielo is a rich and creamy Spanish dessert that is similar to flan, but with a higher proportion of egg yolks, giving it a firmer texture and richer flavor.
Ingredients - Serves 6
- Sugar syrup - 1 cup
- Egg yolks - 8
- Water - 1/4 cup
- Sugar - 1 cup
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine the sugar and water. Bring to a boil, stirring until the sugar has dissolved. Continue boiling until the syrup reaches a golden caramel color.
- Pour the caramel into a round cake pan, tilting to coat the bottom and sides. Set aside.
- In a large bowl, beat the egg yolks with the sugar syrup until well mixed.
- Pour the egg yolk mixture into the caramel-coated pan.
- Place the pan in a larger baking dish and add enough hot water to the larger dish to come halfway up the sides of the cake pan.
- Bake in the preheated oven for about 1 hour, or until the custard is set and a knife inserted into the center comes out clean.
- Remove from the oven and let cool. When completely cool, invert onto a serving plate.
