Jalebi
Jalebi is a popular Indian sweet made with fermented batter, deep-fried and soaked in sugar syrup.
Ingredients - Serves 6
- Sugar syrup - 1 cup
- Vegetable oil - For deep frying
- Saffron strands - Few strands
- Cardamom powder - 1/2 teaspoon
- Sugar - 1 tablespoon
- Water - 1/2 cup
- Yogurt - 1/2 cup
- All-purpose flour - 1 cup
Let's Get Started
- In a mixing bowl, combine all-purpose flour, yogurt, water, sugar, cardamom powder, and saffron strands. Mix well to form a smooth batter.
- Cover the bowl with a clean cloth and let the batter ferment for 4-5 hours or overnight.
- Heat vegetable oil in a deep pan or kadai over medium heat.
- Pour the fermented batter into a squeeze bottle or a piping bag with a small round tip.
- Squeeze the batter in a spiral shape into the hot oil, starting from the center and moving outwards.
- Fry the jalebis until they turn golden brown and crispy. Remove them from the oil and drain excess oil on a paper towel.
- Dip the fried jalebis into the sugar syrup for a few seconds, ensuring they are well coated.
- Serve the jalebis warm or at room temperature. They can be enjoyed on their own or with a scoop of vanilla ice cream.
