Let's Get Started

  1. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
  2. In a separate bowl, beat the egg and then add the milk and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. In a small bowl, dissolve the instant coffee in hot water. Set aside.
  5. In another bowl, combine the mascarpone cheese and powdered sugar. Mix until smooth.
  6. Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.
  7. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
  8. Remove the pancakes from the skillet and brush each one with the coffee mixture.
  9. Spread a layer of the mascarpone mixture on top of each pancake.
  10. Repeat the layers until all the pancakes are used, ending with a layer of mascarpone mixture.
  11. Dust the top of the pancakes with cocoa powder.
  12. Serve the Tiramisu Pancakes warm and enjoy!
