Cookies and Cream Cake
Indulge in this decadent cookies and cream cake made with layers of moist chocolate cake and creamy cookies and cream frosting.
Ingredients - Serves 12
- Oreo cookies - 10, crushed
- Vanilla extract - 1 teaspoon
- Powdered sugar - 1/2 cup
- Heavy cream - 2 cups
- Oreo cookies - 20, crushed
- Milk - 1 cup
- Vanilla extract - 2 teaspoons
- Eggs - 2
- Granulated sugar - 1 1/2 cups
- Unsalted butter - 1/2 cup, softened
- Salt - 1/2 teaspoon
- Baking soda - 1 1/2 teaspoons
- Baking powder - 1 1/2 teaspoons
- Cocoa powder - 3/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Fold in the crushed Oreo cookies.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Fold in the crushed Oreo cookies.
- Place one cake layer on a serving plate and spread a layer of the cookies and cream frosting on top.
- Place the second cake layer on top and frost the entire cake with the remaining frosting.
- Garnish with additional crushed Oreo cookies, if desired.
- Slice and serve the delicious cookies and cream cake!
