Let's Get Started

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. In a food processor, combine the almond flour and powdered sugar and process until fine.
  3. In a large bowl, beat the egg whites until foamy. Add the granulated sugar and cream of tartar and continue to beat until stiff peaks form.
  4. Gently fold in the almond flour mixture until the batter is smooth and shiny.
  5. Transfer the batter to a piping bag and pipe onto the prepared baking sheets. Let sit for 30 minutes to form a skin.
  6. Bake for 20 minutes, or until the macarons are set. Let cool completely.
  7. In a small bowl, combine the mascarpone cheese, heavy cream, and coffee granules. Beat until smooth.
  8. Pipe the filling onto half of the macarons and top with the remaining macarons.
  9. Dust with cocoa powder before serving.
