Thyme and Butter Braised Artichokes

Ingredients - Serves 4

  1. Prepare the artichokes by trimming the stems and removing the tough outer leaves.
  2. Cut off the top third of each artichoke and use a spoon to remove the choke (the fuzzy part in the center).
  3. In a large skillet, melt the butter over medium heat.
  4. Add the minced garlic and chopped thyme to the skillet and cook for 1-2 minutes, until fragrant.
  5. Place the artichokes in the skillet, cut side down, and cook for 5 minutes to brown the bottoms.
  6. Flip the artichokes and add the lemon juice, salt, and pepper to the skillet.
  7. Pour the water into the skillet, cover, and reduce the heat to low.
  8. Simmer for 30-40 minutes, or until the artichokes are tender when pierced with a fork.
  9. Serve the braised artichokes warm, drizzled with the buttery thyme sauce from the skillet.
