Thyme and Butter Braised Artichokes
These thyme and butter braised artichokes are tender, flavorful, and make for a delicious appetizer or side dish.
Ingredients - Serves 4
- Water - 1 cup
- Salt and pepper - To taste
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Fresh thyme - 2 tablespoons, chopped
- Butter - 4 tablespoons
- Artichokes - 4 medium-sized
Let's Get Started
- Prepare the artichokes by trimming the stems and removing the tough outer leaves.
- Cut off the top third of each artichoke and use a spoon to remove the choke (the fuzzy part in the center).
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and chopped thyme to the skillet and cook for 1-2 minutes, until fragrant.
- Place the artichokes in the skillet, cut side down, and cook for 5 minutes to brown the bottoms.
- Flip the artichokes and add the lemon juice, salt, and pepper to the skillet.
- Pour the water into the skillet, cover, and reduce the heat to low.
- Simmer for 30-40 minutes, or until the artichokes are tender when pierced with a fork.
- Serve the braised artichokes warm, drizzled with the buttery thyme sauce from the skillet.
