Three Cup Chicken
Three Cup Chicken is a popular traditional Taiwanese dish. The name comes from the three key ingredients: sesame oil, Chinese rice wine, and soy sauce.
Ingredients - Serves 4
- Red chilies - 2, sliced
- Thai basil leaves - 1 cup
- Ginger slices - 5
- Garlic cloves - 8, smashed
- Soy sauce - 1/3 cup
- Chinese rice wine - 1/3 cup
- Sesame oil - 1/3 cup
- Chicken thighs - 1.5 pounds, boneless and skinless
Let's Get Started
- Heat the sesame oil in a large wok or skillet over medium-high heat.
- Add the chicken and cook until browned on all sides.
- Add the garlic and ginger and cook for another minute.
- Add the rice wine, soy sauce, and chilies. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, or until the chicken is cooked through.
- Stir in the basil leaves and cook for another minute, until the leaves are wilted.
- Serve the chicken with steamed rice.
