Thakali Cuisine
Thakali cuisine is a traditional Nepali cuisine that originated from the Thakali community in the Mustang region of Nepal. It is known for its flavorful dishes and unique cooking techniques.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Mustard oil - 3 tablespoons
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Ginger - 1-inch piece, grated
- Garlic - 4 cloves, minced
- Onions - 2, finely chopped
- Tomatoes - 2, chopped
- Chicken - 500 grams, boneless and diced
- Basmati rice - 2 cups
Let's Get Started
- Wash the basmati rice and soak it in water for 30 minutes. Drain the water and set aside.
- Heat mustard oil in a large pan or pressure cooker.
- Add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger. Sauté for another minute.
- Add the diced chicken and cook until it turns white and is no longer pink.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the chicken and tomatoes with the spices.
- Add the soaked and drained basmati rice to the pan or pressure cooker. Mix gently to combine with the chicken and spices.
- If using a pan, add 4 cups of water to the rice and chicken mixture. Cover and cook on low heat until the rice is cooked and fluffy.
- If using a pressure cooker, add 3 cups of water to the rice and chicken mixture. Close the lid and cook for 2 whistles or until the rice is cooked.
- Once cooked, let the pressure release naturally before opening the cooker.
- Garnish with fresh cilantro and serve hot.
