Ingredients - Serves 4

Let's Get Started

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain the water and set aside.
  2. Heat mustard oil in a large pan or pressure cooker.
  3. Add the chopped onions and sauté until golden brown.
  4. Add the minced garlic and grated ginger. Sauté for another minute.
  5. Add the diced chicken and cook until it turns white and is no longer pink.
  6. Add the chopped tomatoes and cook until they become soft and mushy.
  7. Add the cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well to coat the chicken and tomatoes with the spices.
  8. Add the soaked and drained basmati rice to the pan or pressure cooker. Mix gently to combine with the chicken and spices.
  9. If using a pan, add 4 cups of water to the rice and chicken mixture. Cover and cook on low heat until the rice is cooked and fluffy.
  10. If using a pressure cooker, add 3 cups of water to the rice and chicken mixture. Close the lid and cook for 2 whistles or until the rice is cooked.
  11. Once cooked, let the pressure release naturally before opening the cooker.
  12. Garnish with fresh cilantro and serve hot.
