Thai Yellow Curry Pork

Ingredients - Serves 4
- Cooked rice - 4 cups
- Fresh basil leaves - 1/4 cup, chopped
- Potatoes - 2, diced
- Carrots - 2, sliced
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Brown sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Coconut milk - 1 can (14 oz)
- Yellow curry paste - 2 tablespoons
- Pork tenderloin - 1 lb, thinly sliced
Let's Get Started
- In a large pan, heat some oil over medium heat.
- Add the pork slices and cook until browned. Remove from the pan and set aside.
- In the same pan, add the curry paste and cook for a minute until fragrant.
- Pour in the coconut milk and stir well to combine with the curry paste.
- Add the fish sauce and brown sugar, and stir until dissolved.
- Add the bell peppers, onion, carrots, and potatoes to the pan. Cook for about 10 minutes until the vegetables are tender.
- Return the cooked pork to the pan and stir to coat it with the curry sauce.
- Simmer for another 5 minutes to allow the flavors to meld together.
- Stir in the chopped basil leaves.
