Peperoni Ripieni
Peperoni Ripieni, or Stuffed Peppers, is a classic Italian dish. Bell peppers are filled with a savory mixture of rice, ground meat, and herbs, then baked until tender.
Ingredients - Serves 4
- Salt and pepper - To taste
- Basil - 1 teaspoon, dried
- Parmesan cheese - 1/2 cup, grated
- Tomato sauce - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Cooked rice - 1 cup
- Ground beef - 1/2 pound
- Bell peppers - 4 large
Let's Get Started
- Preheat the oven to 350°F.
- Cut the tops off the peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the meat is no longer pink. Drain.
- Stir in the rice, 1/2 cup of the tomato sauce, Parmesan cheese, basil, salt, and pepper.
- Stuff the peppers with the meat mixture and place them in a baking dish.
- Pour the remaining tomato sauce over the peppers.
- Cover and bake for 45 minutes.
- Uncover and bake for an additional 15 minutes, or until the peppers are tender.
