Thai Tom Yum Soup
A spicy and tangy Thai soup made with lemongrass, lime leaves, chili, and shrimp.
Ingredients - Serves 4
- Green onions - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Sugar - 1 teaspoon
- Lime juice - 2 tablespoons
- Fish sauce - 2 tablespoons
- Mushrooms - 1 cup, sliced
- Shrimp - 1/2 pound, peeled and deveined
- Thai chili - 2, sliced
- Galangal - 2 slices
- Kaffir lime leaves - 4 leaves
- Lemongrass - 2 stalks, bruised
- Water - 4 cups
Let's Get Started
- In a pot, bring the water to a boil.
- Add the lemongrass, kaffir lime leaves, galangal, and Thai chili. Simmer for 5 minutes to infuse the flavors.
- Add the shrimp and mushrooms. Cook for 3-4 minutes, or until the shrimp is cooked through.
- Stir in the fish sauce, lime juice, and sugar. Taste and adjust the seasoning if needed.
- Remove the lemongrass, kaffir lime leaves, and galangal from the soup.
- Serve the soup hot, garnished with chopped cilantro and green onions.
