  1. In a small bowl, whisk together tomato ketchup, rice vinegar, soy sauce, brown sugar, and dissolved cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant.
  5. Add sliced bell peppers and onion. Stir-fry for 2-3 minutes until slightly softened.
  6. Add pineapple chunks and the sauce mixture. Stir well to coat the vegetables.
  7. Return the cooked chicken to the skillet and stir to combine with the sauce and vegetables.
  8. Cook for an additional 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
  9. Season with salt and pepper to taste.

  11. Garnish with fresh cilantro before serving.
