Thai Sweet and Sour Chicken
This Thai-inspired sweet and sour chicken is a delicious combination of tangy and sweet flavors with tender chicken and colorful vegetables.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
- Brown sugar - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Tomato ketchup - 1/4 cup
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Pineapple chunks - 1 cup
- Bell peppers - 1 red and 1 green, sliced
- Chicken breast - 2, boneless and skinless, cut into bite-sized pieces

- In a small bowl, whisk together tomato ketchup, rice vinegar, soy sauce, brown sugar, and dissolved cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant.
- Add sliced bell peppers and onion. Stir-fry for 2-3 minutes until slightly softened.
- Add pineapple chunks and the sauce mixture. Stir well to coat the vegetables.
- Return the cooked chicken to the skillet and stir to combine with the sauce and vegetables.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the chicken and vegetables.
- Season with salt and pepper to taste.
- Serve the Thai sweet and sour chicken over steamed rice.
- Garnish with fresh cilantro before serving.
