Thai Crab Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and diced onion. Stir-fry for 2 minutes until fragrant and slightly golden.
  3. Add the diced carrots and frozen peas. Stir-fry for another 2 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Add the chilled jasmine rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps.
  6. Add the cooked crab meat, soy sauce, fish sauce, and lime juice. Stir-fry for another 2 minutes until everything is well combined and heated through.
  7. Remove from heat and garnish with chopped cilantro and green onions.
  8. Serve hot with lime wedges on the side.
