Thai Crab Fried Rice
This Thai-inspired crab fried rice is packed with flavors of crab, vegetables, and aromatic spices.
Ingredients - Serves 4
- Lime wedges - For serving
- Green onions - 2 tablespoons, chopped
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 2, beaten
- Frozen peas - 1/2 cup
- Carrots - 1, diced
- Onion - 1, diced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Crab meat - 1 cup, cooked
- Cooked jasmine rice - 4 cups, chilled
Let's Get Started
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and diced onion. Stir-fry for 2 minutes until fragrant and slightly golden.
- Add the diced carrots and frozen peas. Stir-fry for another 2 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the chilled jasmine rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps.
- Add the cooked crab meat, soy sauce, fish sauce, and lime juice. Stir-fry for another 2 minutes until everything is well combined and heated through.
- Remove from heat and garnish with chopped cilantro and green onions.
- Serve hot with lime wedges on the side.
