Tempura Ramen
This delicious tempura ramen combines crispy tempura with flavorful broth and noodles.
Ingredients - Serves 2
- Nori sheets - 2, shredded
- Soft-boiled eggs - 2
- Green onions - 2, thinly sliced
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken or vegetable broth - 4 cups
- Vegetable oil - For frying
- Shrimp - 8 pieces, peeled and deveined
- Assorted vegetables (e.g. carrots, bell peppers, broccoli) - 1 cup, sliced
- Cold water - 1 cup
- Tempura batter mix - 1 cup
- Ramen noodles - 2 packs
Let's Get Started
- Cook the ramen noodles according to package instructions. Drain and set aside.
- In a bowl, mix the tempura batter mix with cold water until smooth.
- Heat vegetable oil in a deep pan or pot for frying.
- Dip the assorted vegetables and shrimp into the tempura batter, then carefully place them in the hot oil. Fry until golden and crispy. Remove and drain on a paper towel.
- In a separate pot, bring the chicken or vegetable broth to a simmer. Add soy sauce and mirin, and stir well.
- Divide the cooked ramen noodles into serving bowls. Pour the hot broth over the noodles.
- Top the ramen with tempura vegetables and shrimp.
- Garnish with sliced green onions, shredded nori sheets, and soft-boiled eggs.
- Serve hot and enjoy!
