Let's Get Started

  1. Cook the ramen noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix the tempura batter mix with cold water until smooth.
  3. Heat vegetable oil in a deep pan or pot for frying.
  4. Dip the assorted vegetables and shrimp into the tempura batter, then carefully place them in the hot oil. Fry until golden and crispy. Remove and drain on a paper towel.
  5. In a separate pot, bring the chicken or vegetable broth to a simmer. Add soy sauce and mirin, and stir well.
  6. Divide the cooked ramen noodles into serving bowls. Pour the hot broth over the noodles.
  7. Top the ramen with tempura vegetables and shrimp.
  8. Garnish with sliced green onions, shredded nori sheets, and soft-boiled eggs.
  9. Serve hot and enjoy!
