Kogashi Ramen
Kogashi Ramen is a rich and flavorful Japanese noodle soup with charred soy sauce and miso broth.
Ingredients - Serves 2
- Nori sheets - 2, shredded
- Corn kernels - 1/2 cup
- Bean sprouts - 1 cup
- Soft-boiled eggs - 2
- Green onions - 2, chopped
- Chicken broth - 4 cups
- Miso paste - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Pork belly - 200g, thinly sliced
- Ramen noodles - 2 packs
Let's Get Started
- In a large pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.
- In a separate pot, heat a tablespoon of oil over medium heat. Add the pork belly slices and cook until browned and crispy. Remove from the pot and set aside.
- In the same pot, add the minced garlic and grated ginger. Cook for a minute until fragrant.
- Add the soy sauce and miso paste to the pot and stir well to combine.
- Pour in the chicken broth and bring to a simmer. Let it cook for 10 minutes to allow the flavors to meld together.
- Divide the cooked ramen noodles into serving bowls. Pour the hot broth over the noodles.
- Top each bowl with the cooked pork belly slices, chopped green onions, soft-boiled eggs, bean sprouts, corn kernels, and shredded nori sheets.
- Serve hot and enjoy!
