Tempeh Tikka Masala
A vegan twist on the classic Indian dish, this Tempeh Tikka Masala is packed with flavor and protein.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt - To taste
- Coconut milk - 1 can (14 oz)
- Canned tomatoes - 1 can (14 oz)
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Garam masala - 2 teaspoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Tempeh - 8 oz, cubed
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the tempeh and cook until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the onion, garlic, and ginger and cook until the onion is soft.
- Add the garam masala, turmeric, and cumin and cook for another minute.
- Add the canned tomatoes, coconut milk, and salt. Bring to a simmer.
- Return the tempeh to the pan and simmer for 15 minutes, until the sauce has thickened.
- Serve the Tempeh Tikka Masala over rice, garnished with cilantro.
