Tempeh Stir Fry
A delicious and healthy vegan stir-fry dish made with tempeh, colorful vegetables, and a savory sauce.
Ingredients - Serves 4
- Green onions - 2, chopped
- Carrots - 2, sliced
- Broccoli - 1 cup, chopped
- Red bell pepper - 1, sliced
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Maple syrup - 1 tablespoon
- Soy sauce - 1/4 cup
- Tempeh - 8 ounces, cubed
Let's Get Started
- In a bowl, mix together the soy sauce and maple syrup. Add the tempeh cubes and let marinate for 10 minutes.
- Heat the sesame oil in a large pan over medium heat. Add the garlic and ginger and cook for 1 minute.
- Add the marinated tempeh to the pan and cook until browned on all sides, about 5 minutes. Remove the tempeh from the pan and set aside.
- In the same pan, add the bell pepper, broccoli, and carrots. Cook until the vegetables are tender, about 5 minutes.
- Return the tempeh to the pan and stir to combine with the vegetables. Cook for another 2 minutes.
- Serve the stir-fry hot, garnished with the chopped green onions.
