Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the onion and bell peppers and cook until softened, about 5 minutes.
  4. Return the tempeh to the skillet and add the fajita seasoning and lime juice. Stir to combine and cook for another 2-3 minutes.
  5. Warm the tortillas in a dry skillet or in the microwave.
  6. To serve, fill each tortilla with the tempeh mixture, avocado slices, and chopped cilantro.
