Tempeh Fajitas
These vegan tempeh fajitas are packed with flavor and make a satisfying meal. They're easy to make and perfect for a weeknight dinner.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Avocado - 1, sliced
- Tortillas - 8
- Lime - 1, juiced
- Fajita seasoning - 1 packet
- Bell peppers - 2, sliced
- Onion - 1 large, sliced
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, sliced
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the onion and bell peppers and cook until softened, about 5 minutes.
- Return the tempeh to the skillet and add the fajita seasoning and lime juice. Stir to combine and cook for another 2-3 minutes.
- Warm the tortillas in a dry skillet or in the microwave.
- To serve, fill each tortilla with the tempeh mixture, avocado slices, and chopped cilantro.
