Let's Get Started

  1. Preheat the oven to 180°C.
  2. Crush the digestive biscuits and mix with the melted butter. Press this mixture into the bottom of a springform pan to form the base of the cheesecake.
  3. In a large bowl, beat the Payoyo cheese with the sugar until smooth.
  4. Add the eggs one by one, beating well after each addition.
  5. Add the cream and flour and mix until smooth.
  6. Pour the cheese mixture over the biscuit base in the springform pan.
  7. Bake for 60 minutes, or until the cheesecake is set but still slightly wobbly in the center.
  8. Let the cheesecake cool in the oven with the door slightly open.
  9. Once cooled, refrigerate for at least 4 hours before serving.
