Tarta de Queso Payoyo
A delicious cheesecake made with Payoyo cheese, a specialty from the mountains of Cadiz, Spain.
Ingredients - Serves 8
- Digestive biscuits - 200 grams
- Butter - 50 grams
- Flour - 1 tablespoon
- Cream - 200 ml
- Eggs - 4
- Sugar - 200 grams
- Payoyo cheese - 500 grams
Let's Get Started
- Preheat the oven to 180°C.
- Crush the digestive biscuits and mix with the melted butter. Press this mixture into the bottom of a springform pan to form the base of the cheesecake.
- In a large bowl, beat the Payoyo cheese with the sugar until smooth.
- Add the eggs one by one, beating well after each addition.
- Add the cream and flour and mix until smooth.
- Pour the cheese mixture over the biscuit base in the springform pan.
- Bake for 60 minutes, or until the cheesecake is set but still slightly wobbly in the center.
- Let the cheesecake cool in the oven with the door slightly open.
- Once cooled, refrigerate for at least 4 hours before serving.
