  1. In a saucepan, heat the lemon juice and sugar over medium heat until the sugar is dissolved.
  2. In a separate bowl, beat the eggs until light and fluffy.
  3. Slowly pour the hot lemon mixture into the beaten eggs, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
  5. In a small bowl, dissolve the gelatin in water and let it sit for a few minutes.
  6. Add the gelatin mixture to the lemon mixture and stir until well combined.
  7. Remove from heat and let it cool to room temperature.
  8. In a separate bowl, whip the cream until stiff peaks form.
  9. Gently fold the whipped cream into the cooled lemon mixture.
  10. In a food processor, crush the digestive biscuits until fine crumbs form.
  11. Mix the melted butter with the crushed biscuits.
  12. Press the biscuit mixture into the bottom of serving glasses or a baking dish to form a crust.
  13. Pour the lemon cream mixture over the crust.
  14. Refrigerate for at least 4 hours, or until set.
  15. Garnish with lemon zest before serving.
