Citronfromage
Citronfromage is a classic Danish dessert made with lemon juice, sugar, eggs, and whipped cream.
Ingredients - Serves 6
- Butter - 2 tablespoons, melted
- Digestive biscuits - 6
- Lemon zest - 1 teaspoon
- Water - 1/4 cup
- Gelatin - 1 tablespoon
- Whipped cream - 1 cup
- Eggs - 3
- Sugar - 1/2 cup
- Lemon juice - 1/2 cup
Let's Get Started
- In a saucepan, heat the lemon juice and sugar over medium heat until the sugar is dissolved.
- In a separate bowl, beat the eggs until light and fluffy.
- Slowly pour the hot lemon mixture into the beaten eggs, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.
- In a small bowl, dissolve the gelatin in water and let it sit for a few minutes.
- Add the gelatin mixture to the lemon mixture and stir until well combined.
- Remove from heat and let it cool to room temperature.
- In a separate bowl, whip the cream until stiff peaks form.
- Gently fold the whipped cream into the cooled lemon mixture.
- In a food processor, crush the digestive biscuits until fine crumbs form.
- Mix the melted butter with the crushed biscuits.
- Press the biscuit mixture into the bottom of serving glasses or a baking dish to form a crust.
- Pour the lemon cream mixture over the crust.
- Refrigerate for at least 4 hours, or until set.
- Garnish with lemon zest before serving.
