Tanjia
Tanjia is a traditional Moroccan dish that is slow-cooked in a clay pot. It's a flavorful and tender stew made with meat, spices, and preserved lemon.
Ingredients - Serves 6
- Salt and pepper - To taste
- Water - 1 liter
- Olive oil - 2 tablespoons
- Preserved lemon - 1, chopped
- Saffron threads - A pinch
- Paprika - 1 teaspoon
- Ground coriander - 2 teaspoons
- Ground cumin - 2 teaspoons
- Garlic cloves - 6, crushed
- Lamb shoulder - 1.5 kg, cut into large chunks
Let's Get Started
- In a large bowl, combine the lamb, garlic, cumin, coriander, paprika, saffron, preserved lemon, olive oil, salt, and pepper. Mix well to coat the lamb in the spices.
- Transfer the lamb mixture to a tanjia or a slow cooker.
- Add the water and stir to combine.
- Cover and cook on low for 4 hours, or until the lamb is tender and the flavors are well combined.
- Serve the tanjia hot, with bread for dipping.
