Tandoori Quinoa
This flavorful and nutritious Tandoori Quinoa is a fusion dish that combines the traditional Indian tandoori flavors with the goodness of quinoa.
Ingredients - Serves 4
- Lime wedges - For serving
- Salt - To taste
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2, thinly sliced
- Red bell pepper - 1, diced
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Tandoori masala - 2 tablespoons
- Greek yogurt - 1/2 cup
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
- In a bowl, mix together the Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, and a pinch of salt.
- Add the cooked quinoa to the bowl and mix well to coat the quinoa with the tandoori marinade.
- Heat a tablespoon of oil in a skillet over medium heat. Add the diced red bell pepper and sliced red onion. Cook for 5 minutes or until the vegetables are slightly softened.
- Add the marinated quinoa to the skillet and cook for another 5 minutes, stirring occasionally.
- Remove from heat and garnish with chopped cilantro.
- Serve the Tandoori Quinoa with lime wedges for an extra burst of freshness.
