Let's Get Started

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
  3. In a bowl, mix together the Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, and a pinch of salt.
  4. Add the cooked quinoa to the bowl and mix well to coat the quinoa with the tandoori marinade.
  5. Heat a tablespoon of oil in a skillet over medium heat. Add the diced red bell pepper and sliced red onion. Cook for 5 minutes or until the vegetables are slightly softened.
  6. Add the marinated quinoa to the skillet and cook for another 5 minutes, stirring occasionally.
  7. Remove from heat and garnish with chopped cilantro.
  8. Serve the Tandoori Quinoa with lime wedges for an extra burst of freshness.
