Pork Pho
A traditional Vietnamese soup consisting of broth, rice noodles, herbs, and pork. It's a popular street food in Vietnam and served in various restaurants around the world.
Ingredients - Serves 4
- Chili slices - To taste
- Lime wedges - 4
- Fresh herbs (cilantro, mint, basil) - 1 cup
- Bean sprouts - 1 cup
- Pork tenderloin - 500 grams, thinly sliced
- Rice noodles - 400 grams
- Sugar - 1 tablespoon
- Salt - To taste
- Fish sauce - 3 tablespoons
- Coriander seeds - 1 tablespoon
- Cardamom - 2 pods
- Cinnamon stick - 1
- Cloves - 6 pieces
- Star anise - 5 pieces
- Ginger - 1 piece, charred
- Onions - 2, charred
- Pork bones - 1 kg
Let's Get Started
- In a large pot, add pork bones and enough water to cover. Bring to a boil for a few minutes to clean the bones. Drain and rinse the bones.
- In the same pot, add the cleaned bones, charred onions and ginger, star anise, cloves, cinnamon stick, cardamom, and coriander seeds. Add enough water to cover the bones and bring to a boil.
- Reduce heat to a simmer, add fish sauce, salt, and sugar. Let it simmer for at least 2 hours.
- While the broth is simmering, prepare the rice noodles according to the package instructions.
- Strain the broth and return it to the pot. Adjust seasoning if needed.
- To serve, place some noodles in a bowl, add slices of pork tenderloin, and ladle the hot broth over to cook the pork. Top with bean sprouts, fresh herbs, lime wedges, and chili slices.
