Pork Pho

Ingredients - Serves 4

Let's Get Started

  1. In a large pot, add pork bones and enough water to cover. Bring to a boil for a few minutes to clean the bones. Drain and rinse the bones.
  2. In the same pot, add the cleaned bones, charred onions and ginger, star anise, cloves, cinnamon stick, cardamom, and coriander seeds. Add enough water to cover the bones and bring to a boil.
  3. Reduce heat to a simmer, add fish sauce, salt, and sugar. Let it simmer for at least 2 hours.
  4. While the broth is simmering, prepare the rice noodles according to the package instructions.
  5. Strain the broth and return it to the pot. Adjust seasoning if needed.
  6. To serve, place some noodles in a bowl, add slices of pork tenderloin, and ladle the hot broth over to cook the pork. Top with bean sprouts, fresh herbs, lime wedges, and chili slices.
