Let's Get Started

  1. In a bowl, whisk together the eggs, soy sauce, mirin, and salt.
  2. Heat a non-stick frying pan over medium heat and add the vegetable oil.
  3. Pour a thin layer of the egg mixture into the pan and tilt the pan to spread it evenly.
  4. Once the bottom is set but the top is still slightly runny, start rolling the omelette from one end to the other using a spatula or chopsticks.
  5. Push the rolled omelette to one side of the pan and add another thin layer of the egg mixture.
  6. Tilt the pan to spread the new layer of egg mixture under the rolled omelette.
  7. Once the new layer is set but the top is still slightly runny, roll the omelette again towards the other end.
  8. Repeat steps 5-7 until all the egg mixture is used and you have a thick rolled omelette.
  9. Remove the omelette from the pan and let it cool slightly before slicing into bite-sized pieces.
  10. Serve warm or at room temperature.
