Takuan
Takuan is a traditional Japanese dish made from daikon radish that has been pickled in a mixture of sugar, salt, and rice bran.

- Water - Enough to cover the radish
- Rice bran - 1 cup
- Sugar - 1/2 cup
- Salt - 2 tablespoons
- Daikon radish - 1 large

- Peel the daikon radish and cut it into thick slices.

- Rinse the radish slices and pat them dry.
- In a large bowl, mix together the sugar and rice bran.

- Pack the radish slices into a jar, cover them with water, and seal the jar tightly.
- Let the radish slices pickle for at least a week before eating.
