Ingredients - Serves 4

Let's Get Started

  1. Roast the bell peppers until their skin is blackened. Let them cool, then peel and chop.
  2. Blanch the tomatoes in boiling water for a minute, then peel and chop.
  3. Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant.
  4. Add the chopped bell peppers and tomatoes to the pan. Stir in the cumin, paprika, and salt.
  5. Cook for about 10 minutes, until the vegetables are soft and the flavors are well combined.
  6. Remove from heat and stir in the lemon juice and fresh cilantro.
  7. Serve warm or chilled.
