Taktouka
Taktouka is a delicious Moroccan salad made with bell peppers and tomatoes. It's a perfect side dish or appetizer.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Garlic cloves - 2, minced
- Tomatoes - 4, medium
- Green bell peppers - 2, large
Let's Get Started
- Roast the bell peppers until their skin is blackened. Let them cool, then peel and chop.
- Blanch the tomatoes in boiling water for a minute, then peel and chop.
- Heat the olive oil in a pan over medium heat. Add the garlic and cook until fragrant.
- Add the chopped bell peppers and tomatoes to the pan. Stir in the cumin, paprika, and salt.
- Cook for about 10 minutes, until the vegetables are soft and the flavors are well combined.
- Remove from heat and stir in the lemon juice and fresh cilantro.
- Serve warm or chilled.
