Let's Get Started

  1. Place the beef tongue, onion, garlic, bay leaves, salt, pepper, and cumin in a large pot. Add enough water to cover the tongue.
  2. Bring the water to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the tongue is tender.
  3. Remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and discard.
  4. Slice the tongue into thin strips.
  5. Heat a skillet over medium-high heat. Warm the corn tortillas for about 30 seconds on each side.
  6. Fill each tortilla with a few slices of beef tongue. Top with chopped cilantro and onion.
  7. Serve the tacos de lengua with lime wedges and salsa on the side.
