Tacos de Lengua
Tacos de Lengua are delicious Mexican street tacos made with tender beef tongue, seasoned with traditional spices and served with fresh toppings.
Ingredients - Serves 6
- Salsa - For serving
- Lime wedges - For serving
- Onion - 1/2 cup, finely chopped
- Cilantro - 1/2 cup, chopped
- Corn tortillas - 12
- Cumin - 1 teaspoon
- Pepper - 1 teaspoon
- Salt - 1 tablespoon
- Bay leaves - 2
- Garlic - 4 cloves
- Onion - 1 large, quartered
- Beef tongue - 1 whole
Let's Get Started
- Place the beef tongue, onion, garlic, bay leaves, salt, pepper, and cumin in a large pot. Add enough water to cover the tongue.
- Bring the water to a boil, then reduce the heat to low. Cover and simmer for 3 hours, or until the tongue is tender.
- Remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and discard.
- Slice the tongue into thin strips.
- Heat a skillet over medium-high heat. Warm the corn tortillas for about 30 seconds on each side.
- Fill each tortilla with a few slices of beef tongue. Top with chopped cilantro and onion.
- Serve the tacos de lengua with lime wedges and salsa on the side.
