Szechuan Spicy Chicken

- Vegetable oil - 2 tablespoons
- Peanuts - 1/4 cup
- Green onions - 2, chopped
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Dried red chilies - 8
- Szechuan peppercorns - 1 teaspoon, crushed
- Cornstarch - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken breasts - 2, cut into bite-sized pieces

- In a bowl, mix the chicken pieces with soy sauce and cornstarch. Set aside for 15 minutes to marinate.
