Sweet Potato Stew

Ingredients - Serves 6
- Lime - 1, juiced
- Fresh cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Cayenne pepper - 1/4 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Vegetable broth - 4 cups
- Canned diced tomatoes - 1 can (14 oz)
- Red bell pepper - 1, diced
- Celery - 2 stalks, sliced
- Carrots - 2 medium, sliced
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Sweet potatoes - 3 large, peeled and cubed
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the sweet potatoes, carrots, celery, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the canned diced tomatoes and vegetable broth. Stir in the cumin, paprika, cayenne pepper, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the sweet potatoes are tender.
- Remove the pot from heat and stir in the fresh cilantro and lime juice.
