Sweet Potato Soup
This creamy and flavorful sweet potato soup is perfect for a cozy meal.
Ingredients - Serves 6
- Fresh cilantro - For garnish
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1 teaspoon
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Sweet potatoes - 4 medium, peeled and diced
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
