This flavorful sweet potato curry is made with aromatic spices, creamy coconut milk, and tender sweet potatoes.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt - To taste
- Lime juice - 2 tablespoons
- Vegetable broth - 1 cup
- Coconut milk - 1 can (400ml)
- Cayenne pepper - 1/4 teaspoon
- Turmeric - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Sweet potatoes - 2 large, peeled and cubed

- Heat oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Sauté until the onion is translucent.
