Sweet Corn Soup
This creamy and flavorful sweet corn soup is the perfect comfort food.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Butter - 2 tablespoons
- Milk - 1 cup
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Sweet corn kernels - 2 cups
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Add the sweet corn kernels and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the milk, salt, and black pepper. Heat for another 5 minutes.
- Serve hot, garnished with fresh cilantro.
