Sweet and Sour Prawn Stir Fry
This delicious sweet and sour prawn stir-fry is made with succulent prawns, colorful vegetables, and a tangy sauce.
Ingredients - Serves 4
- Spring onions - 2 stalks, chopped (for garnish)
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Brown sugar - 2 tablespoons
- Ketchup - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Pineapple chunks - 1 cup
- Onion - 1 medium, sliced
- Bell peppers - 1 red and 1 green, sliced
- Prawns - 1 pound, peeled and deveined
Let's Get Started
- In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water to make the sauce. Set aside.
- Heat the vegetable oil in a large pan or wok over high heat.
- Add the prawns and stir-fry for 2-3 minutes, until they turn pink and are cooked through. Remove from the pan and set aside.
- In the same pan, add the sliced bell peppers and onion. Stir-fry for 2-3 minutes, until they start to soften.
- Add the minced garlic and grated ginger to the pan. Stir-fry for another minute.
- Pour the sauce over the vegetables in the pan. Cook for 1-2 minutes, until the sauce thickens and coats the vegetables.
- Add the cooked prawns and pineapple chunks to the pan. Stir-fry for another minute to heat through.
- Season with salt and pepper to taste.
- Garnish with chopped spring onions.
- Serve the sweet and sour prawn stir-fry over steamed rice or noodles.
