Sweet and Sour Pork Stir Fry

Ingredients - Serves 4

Let's Get Started

  1. In a small bowl, whisk together soy sauce, ketchup, rice vinegar, brown sugar, cornstarch, and water to make the sauce. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat.
  3. Add the pork strips and cook until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers, onion, garlic, and ginger. Stir fry for 2-3 minutes until the vegetables are crisp-tender.
  5. Add the pineapple chunks and cooked pork back to the skillet.
  6. Pour the sauce over the pork and vegetables. Stir well to coat everything in the sauce.
  7. Cook for an additional 2-3 minutes until the sauce thickens and coats the pork and vegetables.
  8. Season with salt and pepper to taste.
  9. Serve the sweet and sour pork stir fry over cooked rice.
  10. Garnish with sliced green onions.
