Sweet and Sour Pork Stir Fry
This delicious sweet and sour pork stir fry is made with tender pork, colorful vegetables, and a tangy sauce.
Ingredients - Serves 4
- Green onions - For garnish
- Cooked rice - For serving
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Brown sugar - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Ketchup - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Pineapple chunks - 1 cup
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Pork tenderloin - 1 lb, sliced into thin strips
Let's Get Started
- In a small bowl, whisk together soy sauce, ketchup, rice vinegar, brown sugar, cornstarch, and water to make the sauce. Set aside.
- Heat vegetable oil in a large skillet or wok over high heat.
- Add the pork strips and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, garlic, and ginger. Stir fry for 2-3 minutes until the vegetables are crisp-tender.
- Add the pineapple chunks and cooked pork back to the skillet.
- Pour the sauce over the pork and vegetables. Stir well to coat everything in the sauce.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the pork and vegetables.
- Season with salt and pepper to taste.
- Serve the sweet and sour pork stir fry over cooked rice.
