  2. Slice the potatoes: Cut off a small, lengthwise slice of each potato—this gives them a base for hasselbacking. Place the potato flat side-down. Starting from one end of the potato, cut almost all the way through, at about 1/4 inch intervals.
  3. Arrange the potatoes on a baking sheet. Sprinkle with salt and pepper, and then drizzle with the melted butter and olive oil. Sprinkle with the minced garlic and chopped rosemary.
  4. Bake the potatoes for about 50 minutes to 1 hour, or until the potatoes turn crispy and the flesh is soft.
  5. Sprinkle with the grated Parmesan cheese and bake for another 5 minutes, or until the cheese is melted and bubbly.
  6. Serve the Hasselback potatoes hot as a side dish.
