Swedish Hasselback Potatoes
These Swedish-style Hasselback potatoes are thinly sliced and roasted until crispy on the outside and tender on the inside. They're a perfect side dish for any meal.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Fresh rosemary - 1 tablespoon, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons, melted
- Olive oil - 2 tablespoons
- Potatoes - 4 large
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Slice the potatoes: Cut off a small, lengthwise slice of each potato—this gives them a base for hasselbacking. Place the potato flat side-down. Starting from one end of the potato, cut almost all the way through, at about 1/4 inch intervals.
- Arrange the potatoes on a baking sheet. Sprinkle with salt and pepper, and then drizzle with the melted butter and olive oil. Sprinkle with the minced garlic and chopped rosemary.
- Bake the potatoes for about 50 minutes to 1 hour, or until the potatoes turn crispy and the flesh is soft.
- Sprinkle with the grated Parmesan cheese and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Serve the Hasselback potatoes hot as a side dish.
